"The owner of the small supermarket been charged over the blaze on Tuesday morning.

Chadi Jooma, 36, who broke both his legs, injured his pelvis and neck and received burns to the face, was refused bail at a bedside hearing at Royal North Shore Hospital after being transferred from Westmead.

He was charged with destroy property with intent to endanger life and remanded in Corrective Services custody to appear in Central Local Court on Thursday, October 17."
